These things are so good. I had not thought or had them in a long time, then my cousin emailed me for the recipe and I couldn’t get them out of my head.
I got the recipe from my mom’s collection of recipes that she gave to me years ago. She used to make it for baby showers and holidays (mostly Christmas). They’re heaven, they melt in your mouth and the fresh lemon flavor just fills the mouth. Mmm!
There’s no way you can eat fewer than 6 in a sitting. Promise.
Melting Moments Cookies
makes about 60 cookies
- 1 cup butter, room temp
- 1/2 cup powdered sugar
- 2/3 cup cornstarch
- 1 cup flour
Cream butter and sugar until fluffy. Gradually add blended flour and cornstarch. Cool dough for about 20 minutes. Place dough in spritz maker and use circular template, extract 5 dozen about 1 – 1/2 inches apart. If you don’t have a cookie press, make 1/2 inch to 3/4 inch balls and flatten with a spatula. Bake at 325 for 15 minutes. Cook until set, not browned. Frost and serve.
Lemon Frosting
makes about 2 cups
- 2 cups powdered sugar
- 1 T lemon juice
- 1/4 cup butter
- grated lemon rind
Whip. Frost.

I love it! So spring-y! We have themes at my church for the monthly potluck, and the upcoming one is “Think Spring;” I think these would the perfect nod to the melting snow outside.
Juliette, I like your idea. I have never used Meyer lemons. I bet this would be a great application to try them as their flavor would really shine through and be appreciated.
