Creamy Cilantro Dressing

Here’s the recipe for the Creamy Cilantro Dressing from Cafe Rio. It’s fabulous and easy. You can use this dressing on your own Cafe Rio-style salads, burritos, or –my favorite– on grilled cheese sandwiches. Mmmm. Hope you enjoy! You can download a printable recipe card here.

Creamy Cilantro Dressing

1/3 cup buttermilk
1 cup mayonnaise
1 cup cilantro leaves
1/4 teaspoon crushed jalapeno pepper*
1 Ranch mix packet
2 cloves garlic
3 tomatillos

Add all ingredients in a blender, blend until smooth. Makes about one quart.

*The recipe calls for crushed jalapeno, but I used crushed red pepper instead. It wasn’t quite as spicy, but tasted the same.

      I just had a Cafe Rio salad last night for the first time since moving here. The dressing is still the best around! It’s nice that now I can make it whenever I please. Thanks for the recipe.

      Thank you! Me and Mark are so excited to have this readily available in our fridge whenever. Cafe Rio is getting so expensive.

      P.S. Me and Mark have decided that we want to live closer. So move back, or we’re just going to have to move out there. Don’t worry, we have an air mattress.

      We tried this last night! I’m totally embarrassed to admit I’ve never actually had a cafe rio salad, but we made some last night, and ….. WOW, it was soooo good. So thank you for sharing! I plan to go eat some left overs of it right now :).
