Curiously Strong Peppermint Patties

Last weekend I found a recipe for homemade york peppermint patties that only calls for 3 ingredients with an optional 4th. It’s definitely my kind of recipe! I had to give it a go. Mine didn’t turn out nearly as beautiful or small as the ones in the recipe. Mine also (probably) turned out a LOT stronger than hers, too. I think my brain fell asleep at the wheel when I was adding the peppermint because they’re UBER strong. They’re so strong, you only want to take very small bites at a time. They’re still good, though.

I packaged three of them to give to some ladies I visit & couldn’t help but use my neon orange vellum envelopes for the packaging.

I’m definitely going to give this recipe another try sometime, but I’ll certainly pay more attention when I’m adding the peppermint.

        I actually have NO idea what coconut butter is. I just bought coconut from the store & ran it through my food processor. I wouldn’t suggest that, though. You’d likely be able to find coconut butter at a Whole Foods or some place similar.

        As for the Peppermint oil, I actually had peppermint oil on hand because of some essential oils I was given a while back. Not sure of the difference, but pretty sure you could find that at Whole foods in the health & wellness section. On the other hand, I’m sure peppermint extract would probably work just as well.

      I thought the oil might be too strong but it does say that oil is more commonly used in candy making. I think I’ll try it with the extract though and let you guys know! :)

      i LOVE your handwriting! i’ve actually been trying to find somewhere to take calligraphy. any suggestions? i’d really love to learn!

        Hillary,

        You should check out your local community college for continuing ed classes. These offerings typically include upholstery, bookbinding, calligraphy, drawing, painting, woodworking, dance, etc. Also, if you don’t have a community college in your area, often times you can take adult education classes through the local high school district. You might be able to find a calligraphy class that way.

        OR, If you’re going to be in the Salt Lake area in November, however, you should sign up for my calligraphy class I’ll be teaching with Nicole’s Art weekend. Even if you’re not local to the area, a trip to SLC for Art Weekend would be well worth it.
